Carrot and Cauliflower Mash

Looking for ways to incorporate more veggies into your dishes? Here is one of our favourite sides which pairs beautifully with so many proteins. Not only is it healthier than your typical mash potato side, but it is incredibly quick and easy to make! Light, fluffy and filled with earthy undertones, this is a delicious side to compliment your dishes. Being so versatile, you can easily serve this mash with a beautiful roast at a dinner party, or whip up a batch for your weekly meal prep!


What you will need:

  • 3 cups cauliflower heads; chopped
  • 2 large carrots; peeled and chopped
  • 2 tbsp. butter
  • Salt and pepper to taste

Directions:
Prep Time: 15 minutes ◊ Cook Time: 8-10 minutes

  1. In a medium sized pot, bring water to boil. Add cauliflower and carrots. Boil for 8-10 minutes or until carrots are easily pierced with a fork. Drain.
  2. Using a large fork or masher, breakdown the carrots and cauliflower. Add butter, salt and pepper and continue to mash until semi-smooth texture is formed. Don’t over mash, as some smaller lumps add a great texture! Serve hot.

Tip: Try substituting the cauliflower for parsnips which will give you a naturally sweet flavour!
