What you will need:
- 3 cups cauliflower heads; chopped
- 2 large carrots; peeled and chopped
- 2 tbsp. butter
- Salt and pepper to taste
Directions:
Prep Time: 15 minutes ◊ Cook Time: 8-10 minutes
- In a medium sized pot, bring water to boil. Add cauliflower and carrots. Boil for 8-10 minutes or until carrots are easily pierced with a fork. Drain.
- Using a large fork or masher, breakdown the carrots and cauliflower. Add butter, salt and pepper and continue to mash until semi-smooth texture is formed. Don’t over mash, as some smaller lumps add a great texture! Serve hot.
Tip: Try substituting the cauliflower for parsnips which will give you a naturally sweet flavour!
