Mini Blueberry Muffins

These mini muffins are bursting with beautiful fresh blueberries and are packed with flavour!  Spiced with cinnamon, nutmeg and lime zest, these muffins make for a tasty treat! We are always looking for delicious recipes for meal prep to get us through the week. These muffins are a delightful option!

Below makes 14-16 muffins:

What you need:

  •         ½ cup butter
  •         ½ cup brown sugar
  •         ½ cup granulated sugar
  •         2 large eggs
  •         1 tsp. vanilla extract
  •         2 tsp. baking powder
  •         Pinch of salt
  •         ¼ tsp. nutmeg
  •         2 cups all-purpose flour
  •         1 cup milk
  •         2 cups fresh blueberries
  •         ½ tsp. lime zest

Cinnamon Sugar Topping

  •         1 tsp. granulated sugar
  •         Dash of cinnamon
  •         Dash of nutmeg


  1. Preheat oven to 375 degree F and lightly grease muffin tray.
  2. In a large mixing bowl using a spatula, cream butter. Add both sugars and beat until well combined.
  3. Beat in eggs one at a time.Then  add vanilla, nutmeg, lime zest, baking powder and salt. Mix together thoroughly.
  4. Beat in half the flour and half the milk. Repeat with the remaining of both, and then gently fold in blueberries.
  5. Spoon mixture into muffin trays; filling each half-way. Sprinkle tops of muffins with cinnamon sugar topping.
  6. Bake for 15-18 minutes until golden brown and toothpick comes out clean when inserted.
  7. Place on a wire rack to cool before serving.
