These mini muffins are bursting with beautiful fresh blueberries and are packed with flavour! Spiced with cinnamon, nutmeg and lime zest, these muffins make for a tasty treat! We are always looking for delicious recipes for meal prep to get us through the week. These muffins are a delightful option!
Below makes 14-16 muffins:
What you need:
- ½ cup butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 2 tsp. baking powder
- Pinch of salt
- ¼ tsp. nutmeg
- 2 cups all-purpose flour
- 1 cup milk
- 2 cups fresh blueberries
- ½ tsp. lime zest
Cinnamon Sugar Topping
- 1 tsp. granulated sugar
- Dash of cinnamon
- Dash of nutmeg
Directions:
- Preheat oven to 375 degree F and lightly grease muffin tray.
- In a large mixing bowl using a spatula, cream butter. Add both sugars and beat until well combined.
- Beat in eggs one at a time.Then add vanilla, nutmeg, lime zest, baking powder and salt. Mix together thoroughly.
- Beat in half the flour and half the milk. Repeat with the remaining of both, and then gently fold in blueberries.
- Spoon mixture into muffin trays; filling each half-way. Sprinkle tops of muffins with cinnamon sugar topping.
- Bake for 15-18 minutes until golden brown and toothpick comes out clean when inserted.
- Place on a wire rack to cool before serving.
