Caramel Peach Rose Tarts


Peaches, caramel and puff pastry? Trust us when we say, these tarts are as good as they look! For your next dinner party, try creating little edible works of art! Have some fun and substitute the peaches for nectarines, pears, plums, or apples! Whatever the season or occasion, you can easily roll up some delicious treats for dessert!

Below makes 5-6 tarts. We recommend to double the recipe!!


What you will need:

  • 1 puff pastry; thawed
  • 2 large peaches; sliced paper thin
  • ¼ cup brown sugar
  • 1 tbsp. butter
  • dash of vanilla extract
  • 1.5 tbsp. cream


Prep Time: 30 minutes  ◊  Cook Time: 45 minutes

  1. Preheat oven to 375 degrees F.
  2. Cut peaches into paper thin slices. The thinner you are able to slice the easier you will be able to roll your tarts.
  3. On a floured surface, roll out puff pastry into a “square” shape approximately ¼ inch thick.
  4. Cut your rolled pastry into 2.5 inch strips.
  5. Heat a small saucepan to low heat, then add brown sugar, butter, vanilla and cream. Continually stir until melted and well combined. Keep saucepan on the heat and continue to whisk for 6-8 minutes or until caramel consistency thickens. Turn off the heat but keep caramel warm. (if caramel becomes hard add a dash of water and stir).  
  6. One by one brush caramel sauce onto each pastry strip. Covering the top half of each, from end to end.
  7. Lay sliced peaches along the top of pastry strip, skin side towards the top and have them overlap slightly. Then create a second layer of peaches slightly below your first layer. Fold the bottom half of the pastry up over the bottom layer of peaches. 
  8. Beginning with the end closest to you, gently roll pastry strip and peaches away from you and into itself until fully enclosed. You may need to add a dab of caramel at the end to seal the pastry roll together.
  9. Place tarts into a greased muffin tin and bake for 45 minutes until golden brown and flakey.
  10. Run a knife around the outside of the muffin pan to gently loosen tarts and carefully pop them out. Let cool completely on a wire rack. For an added decorative flare, sprinkle with icing sugar just before serving!
