Avocado Baked Eggs

Start your day off right with this omega rich, heart-healthy, high protein, fiber-filled and low sugar breakfast (or snack!)! With time being so limited in the mornings, you will be happy to hear these beauties take very little time to cook, and almost no time to prep! Super simple, quick and nutritious, these creamy dreamy breakfast bowls are an idea to get cracking on!

What you will need:

  • 2 ripe avocados
  • 4 eggs
  • 3 tbsp. green onions
  • Pinch of garlic powder
  • Salt and pepper to taste

 

Directions:

Prep Time: 3-5 minutes  ◊  Cook time: 10-12 minutes

  1. Preheat oven to 425 degrees F.
  2. Slice avocados in half lengthwise and remove seed. Scoop out just enough avocado to allow space for the egg. Place avocados in a square oven pan where they can hold each other up right. Season with salt, pepper and a pinch of garlic salt.
  3. One by one, crack the eggs and gently place them into the avocados. TIP: If you are finding your eggs are too large for the avocados you have, crack your eggs into a small bowl one at a time and gently spoon the yolk and enough egg whites into each avocado to fill them. Repeat with each avocado. Season tops of eggs lightly with salt and pepper.
  4. Bake for 10-12 minutes for runny yolks. Garnish with chopped green onion or fresh chives. Enjoy!
